Homemade buckwheat noodles (Soba) are made mainly from buckwheat flour produced in Shiga Prefecture, here. The broth is thick and a bit salty to match the variety of green onion, wasabi, yams, eggs, and plenty of condiments. You will enjoy the change of taste as you add more condiments.

Over the past 20 years, the owner has made approximately 50,000 pieces of Saba-sushi (mackerel sushi). The owner handles the entire process from purchase to judging, to press. The vinegar for pickles and sushi is also made by Nagisa-an. Having devoted his life to making Saba-sushi, he knows “the quality of the mackerel,” “the amount of salt and vinegar,” and “the amount of dipping and pressing. This is the secret to the deliciousness of Nagisa-an’s Saba-sushi, and the reason why it is “one and only”.

In the Kohoku region of northern Shiga Prefecture, ducks fly in from Siberia to overwinter. The ducks are delicious in winter with their abundant fat, and duck dishes are a local delicacy in the Kohoku region. We grill the fatty meat thoroughly and slowly simmer it in our homemade broth to create a savory, tender taste that is unique to Nagisa-an.

Junmaishu (純米酒)
It is Japanese sake without added alcohol. Depending on the brewing method, sake can be classified as Junmai(純米) sake or Honjozo(本醸造)sake. In particular, Junmaishu leaves a sour taste more or less after drinking it because of its nature. Historically, all types of sake were Junmaishu up to the beginning of the Showa period.
